Biography - Chef Sean Clayton
BrewBakers welcomed a new Executive Chef in October, Chef Sean Clayton. Born and raised in Toronto, Ontario, Chef Clayton brings a culinary flare built by his experience in restaurants from coast to coast, including his role as Sous Chef at the Inn at Bay Fortune on Prince Edward Island. Chef Clayton now finds his home in Fredericton and is excited about his future at BrewBakers and bringing his passion for food to life on a daily basis.
However, Clayton has not always been the passionate Chef he is today. Chef Clayton didn’t see cooking as a career in the beginning. Midway through George Brown School for Culinary Arts, he decided cooking wasn’t for him, but completed the program anyway. After taking job in the field, he discovered all the amazing ways that food can be manipulated and elevated. “I discovered it was a fascinating career, and one you could dedicate your whole life to, and in the end only know a fraction of what there is to know about cooking”. From this point, Claytons career took him all over the country, an experience that helped him continue to develop his management skills and a deeper culinary passion.
Chef Clayton is excited to be joining the BrewBakers team because he has a love for the East Coast that keeps bringing him back. He also has an ongoing interest in developing the culinary identity of Canada. “I figure the more places I work in this country, the closer I can come to figuring out what it is and how I can help to develop it a bit myself”. Chef Clayton would also like to expand what people are eating in Fredericton, so be prepared for some curveballs in the coming months, maybe some adventurous dishes, or even elements of dishes that will draw people into trying things they normally wouldn’t go for.
Outside of his professional kitchen, you can find Chef Clayton in his home kitchen cooking up a storm for friends and family. “My most memorable personal experiences with food are meals served family style on large platters filled with seasonal foods, eaten sloppily with your hands. A great glass of wine (or two or three) and good company”.
Biography - Julia Dixon
Sous Chef
“I believe that it is my passion and excitement for food that has allowed me to excel. I am from England, and English trained, with my English equivalent to the Red Seal. I have brought my European flare to BrewBakers and enjoy learning and experimenting with the local cuisine. I strive to produce excellent quality food and continually communicate with local farmers to use the best ingredients around. My hope is that my work will help to continue BrewBakers fantastic reputation. I have a huge amount of pride for being part of this team.”
